Quick Rice Pancakes
Ingredients:
- 2 cups leftover rice
- 2 cups milk
- ¼ cup sugar
- ½ tsp vanilla extract (you can avoid if you do not have)
- ¼ tsp cinnamon (optional)
- Nuts and raisins for garnish
Instructions:
- In a pot, combine rice, milk, and sugar. Simmer for 10-15 minutes, stirring occasionally.
- Add vanilla extract and cinnamon.
- Serve warm or chilled with nuts and raisins.
