Ingredients:
- 1 cup leftover rice
- ½ cup shredded or any cheese
- 1 tbsp flour (or breadcrumbs)
- 1 egg (optional, helps bind)
- ¼ tsp salt
- ¼ tsp black pepper (optional)
Instructions:
- Mix rice, cheese, flour, egg, salt and pepper in a bowl.
- Shape into small balls or patties.
- Heat a little oil in a pan and cook for 2 minutes per side until crispy.
- Serve with ketchup or yogurt dip.
Rescue Tip: No eggs? Mash a little potato or add a spoon of yogurt to bind the mixture.
